MIA.

This summer has been CRAZY!! I know I haven't blogged since June and I really don't like that I haven't. So first sorry that I haven't been blogging. Second, I'm going to be posting a lot of little summarized post over the next few weeks about summer and what's been going on with me lately! I'm very excited to share with y'all.

Being that this is my senior year of college (holy cow! I can't even believe I'll be graduating in just 8 short months) I want to live it up. I want to have the best year I possibly can! My freshmen year here at CWU I attempted to do the 365 photography challenge. I did this on facebook. I have been wanting to write more as it is, so I think I'll be doing it on here. It may become a weekly thing sometimes. But something that I can document my senior year. I'm very excited to do this and be able to share with all of you. (so my mom, aunts and my best friends lol) 
 
So as I finish my first day of my senior year, I'm so ready and overjoyed to start this adventure.

Fruit Pizza !


I know that I've been MIA for awhile. It's been crazy with finals and working full time and now summer school. So sorry about that. BUT on the upside...

The other day I made fruit pizza! And let me tell you, it was delicious!!
So what you'll need is:
store bought roll of sugar cookie dough
Low fat cream cheese
truvia
vanilla
and assorted fruit (I used frozen blackberries,raspberries and blueberries, also bananas and strawberries)

Being that I'm a college student and don't always have the necessary kitchen utensils lol, I just hand pressed the cookie dough into a cookie sheet. BUT if you have a rolling pin, I would suggest using that. Also, if you have a pizza pan... use that too lol. So after your cookie is all rolled/pressed out, cook according to the packing. While it's cooking in the oven, take your softened cream cheese(about room temperature) and beat it with 1/4 cup of truvia. I used the truvia baking blend but I'm sure if you used the regular truvia you'll be okay. Also add 1 tsp of vanilla to the cream cheese mixture.

Take the cookie out of the oven and allow to cool FULLY. As in, it is room temperature. then spread the cream cheese mixture out onto the cookie. It should be about 1/4 inch thick, depending on the pan you use. Okay now is the fun part!! Arranging the fruit on the pizza. I went with the circular pattern but that's just me. Arrange it however you would like =D

My Luckykins

So I used to be on the CWU Equestrian team and due to some personal happenings and that I needed to focus on school work, I no long am. I actually doing quite well with it. I loved being on the team it was so fun and I grew my love for the country and for horses. Today I took my friend Ellye out to the barn to do her chores. I came home smelling like horses and the barn, it was delightful! It really made me miss having a horse. I used to lease one here from a local vet. Oh man I miss that guy. He always knew how to make my day. I will continue to find ways that I can have horses in my life. Here are some pictures of my Lucky.

New hair color?!?

Okay, so for the past few months I have been having a the interest of dying my hair. So, I have great hair and I love it I really do. But I wanna try something new. However, my mom has FOR YEARS been against me dying my hair. This is kinda what I've been thinking. I either want to go a dark chocolate brown, add more highlights or go red/auburn color. Best Friends..

So I was going to write about something else entirely today. However, when I opened up blogger I saw that my best friend Melissa Jane has started a new challenge for her self. That is to blog every day in May. I also got a text from another best friend Alex today; about her spending a few days with me before she heads home for the summer. And then When my group of amazing friends here and I didn't get our tickets for Willamette Country Musical Festival yesterday, "DEEP SOBBING" done now, I thought about what else we could do with those days. AND that lead me to think of the time I spent at Fort Steven's with my best friend Grayson. So, lately I have had a lot of thinking about my dearest friends. Whether they be from elementary, middle school, high school or college. I am very blessed to have the amazing friends I do who have stuck by me through my worst/best times.

I think what got me thinking about my friends lately is that I recently had a dear friend who had reaction to some medication which caused him to go into a coma where he endured 21 seizures in 3 days. When he woke up from the coma he had complete memory loss. It was one of those things where you always hear about it but you never think it'll happen to you or someone you really care about. It really puts things in perspective in life.

For those of you who don't know I live at least 100 miles from my best friends from high school. I do have some amazing friends here at Central and that really does help. But there are those time, which I think everyone has, when you truly just need your best friend you grew up with. I have been having that time for about a few months now. It is very difficult to be sooo far away from your best friends. Due to the fact that each of us now work at least 20 hours a week, go to school full time, and have a life where we live now, it's hard to find/make time to talk about the things happening in our lives. I miss that time with my best friends. I miss the sleepovers that lasted 4 days, the nights of watching scary movies and making junk food and just being ridiculously silly and spontaneous. 

I am very excited to spend a few days with Miss Alex and then Miss Melissa and I are working on planning a vacation for this summer! We are so excited. I think I have spent  MAYBE 36 hours with Alex since she left for school last August. I haven't seen, in person, Melissa in almost 2 year (seriously depressing!). And I haven't seen Grayson and many others in a very long long time. So I'm just saying that if your nearest and dearsest friends are living either in the same town as you or you get to see them often, DO NOT take that for granted. Because in a second everything could change.
