Lasagna Rolls


 YAY! My first recipe post. I made these Lasagna Rolls like a week or so ago and they were soo yummy! I found the recipe at Six Sister's Stuff. I changed a few things from their recipe though.

Ingredients   

9 whole wheat lasagna noodles, cooked
10 oz frozen chopped spinach, thawed and completely drained
15 oz fat free ricotta cheese
3/4cup mozzarella cheese
1 egg
salt and fresh pepper
32 oz jar of spaghetti sauce
9 tbsp (about 3 oz) part skim mozzarella cheese, shredded

Cook and drain noodles according to the package. I think lasagna noodles are a pain to cook. But I found if you put them in the boiling water, and then slowly keep pushing them down so they curl somewhat; then you can turn them horizontal and they curve around the pot. 

While the noodles are cooling, in a medium bowl mix together ricotta cheese, mozzarella cheese, spinach(above says to chop, I didn't chop it), egg and salt and pepper as desired. You'll want to make sure these are really incorporated.

When noodles are around room temperature, lay out on a piece of wax paper, I used foil cause it's what we had. It worked just as well.  At this stage preheat oven to 350 degrees.

Spread about 1/3 cup of cheese mixture on each noodle. I just put some on the noodle in little section and spread them to be even with my offset spatula. I think the offset spatula worked better than just a knife. But use what you have.
This is what is looks like once you have spread out the cheese mixture on the noodle.
Next take one end of the noodle and gently start to roll it up. 
I found it helps to almost roll it directly down, to almost where you started the roll, first.
This just gives a really tight roll. Leave sitting on foil seam side down. It should stay there.
Fill the bottom of a 9x13 pan with enough red sauce to cover the bottom.
I did my rolls one at a time. Transfering them to the baking dish after each roll was done. 
Again place the rolls seam side down. This helps them from unrolling during baking 
and allows the cheeses to melt and cling to pasta.
Above is what it will kinda look like when you finish your rolls. 
I don't have a 9x13 pan so I think mine was about an 6x11 or something.
So I only could get 7 in the first batch. I had 3 rolls after this.
After you have all your rolls in the dish. Cover rolls with as much more sauce you want.
Then top each rolls with about a TBSP of mozzarella cheese. I eye balled this part. 
Then cover dish with foil and bake for 40 minutes or until the cheese melts. 

I had enough sauce in the dish to add extra when I served it. I had a friend join me for dinner and he brought garlic bread and we also had caeser salads with this. It was DELICIOUS!! 
I wanted to wait till the end to say this, but this is a weight watchers recipe!  My friend even liked it and I didn't tell him it was a weight watchers recipe.

First Video Blog!

Parenting

So I am currently in a Parent Education and Guidance class for my Family Consumer Science degree. I have actually found it pretty interesting so far. We have many projects for this class and the one we're supposed to start working on right now is, our book report. So our professor brought books for us to look at. Of course by the time I got to the front of the line there weren't very many books left. So I decided not to take one and come up with something on my own.

So after church on Tuesday, I was on Amazon  and got to thinking. Why not do my book report on a Christian parenting book. Really though. I decided that raising my children through a Christ-centered way is something I want to do. So why not read a Christian based book. I stopped looking at cookbooks and then switched to Christian parenting books. Holy Camomile! I didn't realize how many Christian parenting books there were out there. I have found about 50 books that looked interesting. But now I have to narrow it down and then do my book report. If you have read any of these titles OR if you know of a really great Christian parenting book, PLEASE let me know! It doesn't have to be for a specific age range or anything. By the time I go, we'll have gone through infants up to young adults.

New Obsession!

So if y'all have been around me lately you know that I have a new obsession with PIES! I have been looking up tons and tons of pie recipes. Also, I've been looking up the best pie shops in America. Now, I want to go on a roadtrip just to go to all of these shops! I think it would be the most fun trip ever! However, since it is still Spring Quarter I can't really do that. So instead. I really want to get good at making pies. I have made apple pie before in my nutrition class last quarter and it looked amazing!

So no I have come up with this idea to make pies and cupcakes all spring/summer. Which means I will need some people to test them! I was on Amazon when I came up with this idea. I was looking for pie and cupcakes cookbooks. I know that  I can find many recipes for both on Pinterest ( and I have). But there is just something about having that book in your hand that is so awesome and you can then pass it down to other. I just really like books and think that our world has become too technology dependent (as I'm writing a blog lol). Anywho! These are the cookbooks I found that I would bake every recipe out of.So if anyone wants to get me one of these, that would be totally cool with me and you will be the first person I call to test out my creations!!! These are definitely going on my birthday list! Look out Mama and Daddy!

Starting to Enjoy this.

So the weather over here is starting to get gorgeous! ( yes I know that was improper grammar.) This weekend has been so beautiful! We spent a lot of time outside and it was so warm and amazing. The girls and I went to watch the boys play baseball and then we came home and then played Frisbee! I forgot how much I loved Frisbee. Then I spent most of the day inside yesterday for Easter. I got some homework done and got to work on the job applications I had to turn in.
 I only have a tomorrow left on my cleanse! I am starting to feel full faster which is good! I got through the fruit days decently. I did end up having a salad each day just to cut the sweetness. Below are some pictures from this weekend. =]




My Delicious raspberry sorbet
My raspberry sorbet is made by: 
1 1/2 cups of raspberries 
1/4 cup of vanilla greek yogurt
1 tsp of truvia
2 TBSP of dark chocolate morsels.
Put the first 3 ingredients in a Magic Bullet (or blender) and blend until smooth. Then add the 2 TBSP of dark chocolate and chop them up. So yummy! I couldn't really get my chocolate to grind up very well but it was still really good with the bigger chunks!
